I was thinking of stuffing small Golden Nugget squash with scallop potatoes using sweet potatoes. Maybe put some kind of cheese inside as well. Serve it with ham or chicken wings ? Has anyone tried this, is it good ? What's your opinon about this. Any suggestions ?I have an idea for a recipe using squash. What's your opinion ?
Just do it. Really. The fun of cooking is dreaming up new recipes and trying them out, sometimes they work, other times they don't or you'll figure out what went wrong and tweak it and end up with something perfectly fine.
It might bring out the sweetness pretty good...I love squash and love sweet potatoes so that creation sounds ok in my book!!! Try to sprinkle the top with brown sugar and cinnamon to keep with the sweet flavor and this may be weird, but my aunt makes sweet potatoes with marshmallows you can melt some minis on top if you wanted to...yum.I have an idea for a recipe using squash. What's your opinion ?

Personally, I would go with a gouda cheese and scalloped sweet potatoes with apples, a pinch of cumin, and top with a dollop of sour cream ( I have been using the latin american style sour cream- comes in taller plastic jars or even bags, it is yummy! )
Im not really sure about the sweet potatos,i feel they are too close in taste and texture to make an impact but try it,after all its a matter of personal taste and im just happy youre being creative with your food and cooking outside the box!
I wonder what it would taste like with regular potatos and onions in a cheese sauce made from a sharp cheddar.

butternut squash and sweet potato puree
Caramelized onions and chopped red bell pepper add subtle sweetness to this lightly spiced side dish.
Servings: Makes 6 servings.
ingredients
Nonstick vegetable oil spray
1 1 3/4-pound butternut squash, halved lengthwise, seeded
2 pounds yams (red-skinned sweet potatoes; about 4), halved lengthwise
1/2 cup (or more) canned beef broth
1 teaspoon Ras el Hanout
3 tablespoons olive oil
2 onions, chopped
1 red bell pepper, chopped
1 teaspoon sugar
preparation
Preheat oven to 375掳F. Spray large baking sheet with cooking spray. Place squash and yams on prepared baking sheet, cut side down. Roast until very tender, about 1 hour. Cool slightly. Scoop out flesh and transfer to large saucepan. Mash with potato masher until smooth. Stir in broth and ras el hanout. Season puree to taste with salt and pepper. (Puree can be made 1 day ahead. Cover and refrigerate.)
Heat oil in heavy large skillet over medium heat. Add onions, bell pepper, and sugar. Saut茅 until onions are golden brown and tender, about 15 minutes.
Season to taste with salt and pepper. (Can be made 2 hours ahead. Let stand at room temperature. Rewarm before continuing.)
Bring puree to simmer, adding more broth to thin if necessary. Stir in 3/4 of onion-bell pepper mixture. Transfer to serving bowl. Top with remaining onion-bell pepper mixture and serve.
Makes 6 servings.
ras el hanout
ras el hanout is a Moroccan spice blend that can contain more than 20 ingredients.
Servings: Makes about 2 1/2 tablespoons.
ingredients
2 teaspoons ground nutmeg
1 teaspoon salt
1 teaspoon ground ginger
3/4 teaspoon ground black pepper
1/2 teaspoon ground mace
1/2 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/4 teaspoon crushed saffron threads preparationMix all ingredients in small bowl. (Can be made 1 week ahead. Store airtight at room temperature.)
Makes about 2 1/2 tablespoons.
i have done it this way but i never used scallopped potatoes it sounds intereseting i would go for it.

Sounds good! I would serve it with ham though. My boyfriend is a wonderful cook and has a recipe for squash casserole. The squash is thinly sliced and layered with ham and cheese. You could do it this way and add the potatoes in the layers.
